There is a reason why they are called the Big Fat Indian Wedding. With time the Indian weddings have evolved and changed. A coy bride now comes riding a Harley Davidson and the groom is seen with a tear trickling down his cheeks during the ceremonies. Times have indeed changed and so have the trends for the Band, Baja and Baraat. Apart from brides dancing on catchy tunes with aviators for their pre-wedding shoot, there are hoards of exciting new trends to watch out in the upcoming season.

1. Costumes and decor.
Brides have ditched their mandatory reds and have adopted pastel hues from blush pink to ochre which they colour coordinate with their beau. While the shades of pink, red and orange stay as all-time favourites, they have now started experimenting bolder and newer colours for pre and post wedding functions. Just like the costumes, the decor also has taken a pastel turn. No more gaudy lights and flashy ornaments, The decor is much more minimalistic and subtle these days.

2. Invites.
The Dolce and Gabbana invite for Isha Ambani’s wedding left us gob smacked and gave us new invitation goals. Gone are the days of ‘mithai’ and other sweets with the invitation cards. With E invites being the latest trend, the gift boxes now contain teacakes, designer cupcakes and artisan chocolates. The newest entry on this front has been dessert items with longer shelf life like fudge and enticing new flavours in teacakes. Another trend which is slowly catching on is gifting healthy alternatives to sweets like sugar free cakes, granola jars or dressed up chocolate barks. Selected vendors also personalise these with providing gluten-free or vegan options for the guests who have special dietary requirements Beautifully packed in personalised packing which matches the theme of the event makes these new ideas absolutely bewitching.

3. Food.
There was a time when a wedding buffet meant daal makhani and paneer for the vegetarians and chicken curry for non-vegetarians. These days, attempts are being made to provide more variety with lesser portions. There’s something for everyone out there. With more and more millennials succumbing to the travel bug, the global influence is also increased. A Thai curry or a Spanish salad is no more a novelty in weddings.

 

Special emphasis is now given to starters which were initially limited to kebabs or fritters. Dainty hors-d’oeuvre and pretty looking bites on toothpicks can be seen everywhere. Easy access to ingredients and willingness to experiment has seen the advent of caviar on toast and shellfish on the menu which was unheard of at one point of time.

The other entry to the trend is a dedicated dessert bar. More and more couples are choosing a wedding cake as part of the celebrations. The desserts have a whole lot of choices to choose from. Exotic cakes to customized cupcakes as per the wedding theme adorn these dessert tables. Sugar free and healthier options for the diet conscious crowd and special desserts for vegan guests, the desserts have indeed come a long way. More and more bakers are now experimenting with the fusion of Traditional Indian Flavours with international techniques which provides interesting options to choose from.

The visible metamorphosis can be seen at almost every Indian wedding now. The cuisine at a wedding is now more insightful of the bride and groom’s persona and does a commendable job in showcasing the same.

The vegan diet is devoid of all animal products, including meat, eggs and dairy.

People generally adopt this diet for a variety of reasons, primarily a respect for the environment and kindness towards the entire animal kingdom is where all this comes from.  Whether it is ethics or environment, being vegan is not just about the diet. It is the entire thought process which shuns all form of animal products in order to exclude all forms of animal exploitation and cruelty towards them. Being a vegan is a lifestyle which reflects in their diet and their clothing too.

There has been a major debate amongst the medical experts about the health benefits of this diet. While some argue the fact that this diet is nutritionally insufficient. Many essential vitamins and proteins and various other micronutrients are not covered by a strictly plant-based diet. A vegan diet would always need supplements to be nutritionally enriching.

One of the other important argument people have is that Vegan diet restricts food choices to such an extent that it is quite challenging to put it in practice. An entire course of the meal like desserts simply vanishes from the picture for a vegan person. This, however, is not true. There are loads of informative sites online which are dedicated to vegan baking. New and innovative ingredients and recipes are developed constantly to make desserts and bakery products more inclusive of dietary choices.  The unconventional ingredients like cocoa butter, apple cider vinegar, unrefined palm sugar and jaggery are making way into a baker’s pantry.  For beginners, it is very important to understand the food science behind a cake to try and veganise a cake recipe. Switching of ingredients won’t do the trick. The main scaffolds of a good cake are structure builders, moisturizing agents and drying agents. Not every recipe can be veganised without understanding the role of each agent in it.  The new bakers are open to such experimentation and are thus reaching a wider client base. The taste, crumb structure and finish are not highly compromised. In fact, in many cases, the vegan products are healthier and tastier than its non-vegan version.

Veganism is a positive step towards respecting all other life forms and is not just limited to the food preferences. It is a complete lifestyle which teaches us to live in this world peacefully with our other co-inhabitants.
